What are some yummy, cute cookie/dessert recipes you can make with
kids? (made with handy ingredients)
We're expecting snow on Saturday and I wanted to make something
warm and ymmuy, what are some of your family's traditional snow day/Christmas cookie/dessert recipes?
This isn't a dessert exactly, but my mom used to make it on snowy days to help warm us up and the kids might enjoy some of this with their cookies.
Spiced Apple Cider
3/4 gallon apple juice
6 oz orange juice concentrate (don't mix up according to directions just add the frozen or thawed concentrate as it comes out of the can)
3 c cranberry juice
10 whole cloves
1 tsp ground all spice
1/2 c brown sugar
2 cinnamon sticks
Combine all ingredients and mix well. Heat in a Crock Pot or in a roasting pan on the stove top.
In the Crock Pot we usually put it on the higher setting to heat it up to start, then turn it down to low. We leave it in the Crock Pot on low all day ladling it out to drink as wanted and then put leftovers in a pitcher in the fridge at the end of the day to be heated up cup by cup in the microwave in the future.
Christmas Sugar Cookies
1 Cup of Flour
1/2 cup of Butter
1 Egg
1 TSP of Vanilla
1/2 Cup of Vegetable Oil
2 3/4 Flour
1 TSP Baking Soda
1 TSP of Cream of Tartar
Mix Together Sugar, Butter, Egg and Vanilla in Mixing Bowl with mixer, Add Dry and Oil Ingredients Mix well Chill for an Hour, drop by slightly rounded Teaspoons on to an Ungreased Cookie Sheet 1 1/2 Inches Apart.
Press Down with with a Glass Plate Dipped in Sugar, bake for 10 Minutes and 350 Degrees, when Color and Decorate or get your Christmas Cookie Cutter and Color Decorate with Christmas Cookies you see theirs a lot you can do with Sugar Cookies just be Creative.

Holly Leaf Cookies:
1 stick butter
3 cups miniature marshmellows
2 tsp vanilla
4 cups cornflakes
1 bag red hots
green food coloring
Melt the butter and marmellows. Stir in the vanilla and green food coloring. Gently fold in the corn flakes and drop by medium sized spoon fulls onto waxed paper. Press 3 red hots onto each drop to look like holly leafs.
You could also make a flour and salt play dough, color and add scent by using koolade and the roll out and press with cookie cutters. Use a straw to make a hole for string and bake. Then paint with poster paints, markers etc…
Sugar cookies are also good as well, as would be maming gingerbread men.

The holly leafs are something my hubby's grandmother has been doing with her grandkids for the last 40 years, and now with great grandkids for aout 15 years. And of course her own daughter for 60 years.
She is 88 and still does them every year.
this is one of our favorites. i loved making it with my mom growing up. it's simple but oh so nummy! We call it Christmas jello because my grandma was so poor, she would only make it at Christmas. It's not warm, but delicous!
all you need is..
1 large box of Strawberry Jello
1 tub of frozen strawberries - thawed
1 extra creamy cool whip
Make the "hot" portion of the jello: the jello and 2 cups boiling water until dissolved
DO NOT add the 2 cups of cold water. Pour the thawed strawberries and it's juice add cold water to meassure 2 cups.
stir and place in refrigerator for about 2 to 3 hours until a bit firm, but not set.
add 2 cups of whipped cream and mix with your mixer. yes, it will look a bit watery. put back in fridge for another 4-6 hours and watch the kids go nuts over this nummy treat!
For holiday dinners, I make it the day before so it's really set.
THIS IS A FUN ONE!! HAVE A POPCORN AIR POPPER?
You just need a 1/4 cup of unpopped popcorn and a half a bag or half a brick of Almond Bark.
Pop the corn and place in a clean unsented garbage bag. have the kids pick out the grannies for you. while they do that, melt the almand bark in a double boiler. when its completely melted, pour over popcorn. close up bag with a bunch of air in it and have the kids help shake it. Let it cool and much away. The kids will love it! It is so good and light.
Have fun in the snow… we're getting it here too.

Chocolate Nut Chip Cookies
1 2/3 cup flour
2/3 cup Cocoa
1 tsp Baking soda
1/2 tsp Salt
1 cup Crisco shortening
3/4 cup Brown sugar (gently packed)
1/2 cup Granulated sugar
1 Egg
2 tbsp Milk
2 tsp Vanilla extract
2 cups White chocolate chips
1 1/2 cups nuts (chopped)
Preheat oven to 375 degrees F. Combine flour, cocoa, baking soda and salt and mix well. Cream the shortening, sugars, egg, water and vanilla extract in large mixing bowl until light and creamy. Add in dry ingredients with mixer on low speed until just blended. Stir in white chocolate chips and nuts. Drop dough by tablespoonfuls onto ungreased cookie sheets. Leave 1 - 2 inches between cookies as they will spread. Bake at 375 degrees F for 7 to 9 minutes. Do not overbake. Cool for about 1 minute, then remove to wire cooling rack to cool completely.

CHRISTMAS FUDGE COOKIES
1 can Eagle Brand milk
2 tsp. butter
6 oz. chocolate chips
1 c. flour
1 c. nuts
1 tsp. vanilla
Melt chocolate chips and butter on low heat. Stir and add Eagle Brand milk, flour, nuts and vanilla. Cool — spoon by teaspoon on greased pan. Bake at 325 degrees for 10-12 minutes.
Peppermint Brittle
2 pounds white chocolate
30 small peppermint candy canes
Line a large jellyroll pan with heavy-duty foil. Place white chocolate in a microwave-safe bowl. Heat in microwave on medium setting for 5 to 6 minutes. Stir occasionally, until chocolate is melted and smooth. Place candy canes in a plastic bag, or between two pieces of waxed paper. Using a mallet or rolling pin, break the candy canes into chunks . Stir peppermint into melted white chocolate. Spread evenly in pan, and chill until set, about 1 hour. Break into pieces by slamming pan on counter.
Raspberry Truffle Fudge
3 cups semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
1 1/2 teaspoons vanilla extract
salt to taste
1/4 cup heavy cream
1/4 cup raspberry flavored liqueur
2 cups semi-sweet chocolate chips
Spray a 9×9 inch pan with non-stick cooking spray, and line with wax paper. In a microwave-safe bowl, combine 3 cups chocolate chips and sweetened condensed milk. Heat in microwave until chocolate melts, stirring occasionally. Be careful not to let it scorch. Stir in the vanilla and salt. Spread into pan, and cool to room temperature. In a microwave-safe bowl, combine cream, liqueur, and 2 cups chocolate chips. Heat in microwave until the chocolate melts; stir until smooth. Cool to lukewarm, then pour over the fudge layer. Refrigerate until both layers are completely set, about 1 hour. Cut into 1 inch pieces.
BIG SOFT GINGER COOKIES
2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3/4 cup margarine, softened
1 cup white sugar
1 egg
1 tablespoon water
1/4 cup molasses
2 tablespoons white sugar
Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside. In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.
CHOCOLATE NUT CLUSTERS
1 jar of salted roasted peanuts
1 jar of unsalted roasted peanuts
1 pack of vanilla almond bark
1 12 ounce package of semi sweet chocolate chips.
Layer all in the order listed in a crock pot. Cook on low, without stirring, until the chocolate and almond bark is melted. Drop by spoonfuls onto wax paper to hardened and store in an airtight container.
Cherry Divinity
3 cups granulated sugar
3/4 cup light corn syrup
3/4 cup water
3 large egg whites
1 (3 ounce) package cherry gelatin
3/4 cup coarsely chopped walnuts
1 teaspoon vanilla extract
Grease an 11 1/2 x 7 1/2 in baking dish. Mix sugar, syrup, and water in a 2 quart glass measure. Microwave uncovered on high, stirring twice, 15- 17 minutes until syrup reaches hard ball stage (260 on instant- read thermometer or forms a hard ball when a small amount is dropped into very cold water). Meanwhile, beat egg whites in med-size bowl with an electric mixer until soft peaks form when beaters are lifted. Gradually add gelatin, beating until whites are stiff and glossy. While beating, constantly pour the hot syrup into the egg-white mixture and continue beating until mixture is very thick. Stir in walnuts and vanilla. Spread into prepared dish. Let stand at room temperature until completely cool and set, about 4 hours or overnight. Cut into 1 inch squares. Store in airtight container in a cool dry place

Gingerbread Reindeer!
Melt 4 tblsp butter & 2 tblsp golden syrup. Allow to cool slightly, stir in 3/4 cup brown sugar, 2 tsp ground ginger & 1 beaten egg. Add 2 cups sifted Self-Raising flour & mix well. Roll out & cut out with a gingerbread man cutter. Bake at 160 deg C (320F) for 10 mins or until golden.
Now turn your gingerbread men upside down & pipe reindeer faces on them - you can make chocolate icing, or plain icing with a dash of parisian essence for colour… the antlers go up the 'legs', the ears go on the 'arms' and then add a red sweet for the nose!)

12 ounces White chocolate
1 1/2 cups Whole salted peanuts or cashews
2 cups Chow Mein noodles
In a large heavy pot on low heat, melt chocolate, stirring frequently.
Remove from heat and and gently stir in nuts and noodles
Line chilled cookie sheets with wax paper. Drop mixture onto cookie sheets to look like little icebergs. Refrigerate until needed. Makes about 30 icebergs
